Authentic Neapolitan pizza must be baked in traditional wood-fired ovens, which are primarily handcrafted in Napoli, Italy. The art of oven building has been handed down through generations dating back to the early 1800’s.

The Italian wood-fired oven must be built to proper dimensions along with materials durable enough to maintain temperatures in excess of 900 degrees. The oven’s cooking plane is crafted with an extremely delicate material called Biscotto di Sorrento. While a traditional stationary oven will have a crown and dome formed with refractory bricks to bear extreme heat, our oven is mobile and is designed for the wear and tear that comes with being on the road. The construction of our oven uses cast high temperature refractory cement which can withstand temperatures in excess of 1,500 degrees. The floor of the oven is specially designed to provide significant thermal mass so that no matter how many pizzas we are cooking, the oven floor will retain heat which is a key factor for properly cooking a Neapolitan pizza.
